Maybe it's time to take a closer look at what carbohydrates do for us.

To be fair to carbs, they are an important macro nutrient - they do a lot of good stuff for us if we get the right ones.  Herein lies the problem; there are so many bad carbs out there, and they are plentiful and abundant.

The blood sugar and insulin dysfunction they cause is one thing they do to break down our health.  The bad gut bugs they feed is another.  That is just the beginning.  It's that slow insidious degradation of health these culprits bring on that leads to gout.

The part that really gets me going is how the "money machine" has vilified fats and made us think that eating fat, makes us fat.  This deception is nothing short of criminal.

Big Pharma, Big Ag, Big Insurance...and now Big Tech, have successfully convinced the masses that their low quality, processed foods - that are mostly refined carbohydrates - are "good" for us.  Is there any wonder there is a gout epidemic?

The last piece is that the worst carbohydrate that contributes directly to gout is high fructose corn syrup...HFCS.  It is in EVERYTHING.  And, guess what?  Fructose in any form, is converted to uric acid in the liver.

So the next time you are thinking eating all those steaks and lobsters is what's giving you gout, think again.

Do yourself a favor and read this post. We killers of gout have to be diligent about what goes into our bodies.  Carbohydrates - the right ones - have their place.  Use them wisely.

#71)  Rockin’ The Guac
Prep Time:  10 minutes       
Cook Time:  5 minutes
Serves:  4+

  • 3 medium organic avocados (ripe, ready to eat)
  • 1 organic tomato (diced fine)
  • ½ one white onion (minced fine)
  • 2 cloves garlic (minced fine)
  • ½ cup chopped cilantro
  • 2 limes (juiced)
  • Sea salt & fresh ground pepper (to taste)

  • 2 large jicama (peeled, cut into ¼” thick slices)
Cut avocados in half and scoop out all the meat into a large mixing bowl.  Add all the other ingredients, except for the jicama – mix well until everything is thoroughly combined. (it’s good to leave the mix a little chunky with avocado)

As for the jicama, you can either eat raw, ready to go, or you can give a quick grill.

If you want to eat it raw, you might want to juice another lime or two and drizzle the juice on the jicama slices – jicama with lime and a little sea salt if stupendous!

Or, you can fire up your grill, lay them on the grate for about a minute or so on each side and it gives the jicama a nice texture and it’s great when it’s hot like that.

Either way, arrange the jicama chips artfully around a fancy, decorative bowl of your award-winning guac, and dig in!  THIS…is some healthy sh!t
