When it comes right down to it, we live and die (and get gout) by our habits.  There is always a lot of talk about will power, self discipline, determination, focus, commitment...all good stuff.  I think it's sort of a combination of all those things that come together to create a "habit".

But, it's the opposite of all those things that also create "habits"...bad ones.

It can be said that gout is the result of the lack of all those positive qualities.  How come sometimes we have control of those qualities, and sometimes we don't?

#28)  Coconut & Almond Flour Pecan Pancakes

Prep Time:  10 minutes       
Cook Time:  4 minutes
Serves:  2

  • ¼ cup organic coconut flour
  • ¼ cup organic almond flour
  • ½ tsp baking powder
  • 2 free-range eggs
  • ¼ cup organic coconut milk
  • ½ tsp vanilla extract
  • ¼ cup organic pecans (diced)
  • 2 tbsp pasture fed butter
  • Pinch of sea salt
  • Real maple syrup
  • 6 slices nitrate-free bacon
  • ½ cup organic strawberries (chopped)
  • ½ organic banana (sliced)
In a large skillet, start frying the bacon at medium heat.  Prep another large skillet at low heat for the pancakes.

In a large bowl, mix all the dry ingredients until thoroughly mixed and smooth.  In another bowl – other than the strawberries & bananas – whisk all the wet ingredients together until smooth.  Slowly whisk the wet mix with dry mix until the batter is a smooth consistency. Now add the diced pecans.
 

Drop a tsp or more of butter in the prepped skillet and turn to medium-high heat. (you can even use the leftover bacon grease in the other skillet, it adds a fantastic flavor)

Lay the finished bacon on a plate with a paper towel to blot the grease – that makes it crispier.

Drop ¼ cup dollops of the batter into the hot skillet and cook about a 1 minute on each side or until golden brown.

Plate the pancakes, slater generously with butter, pile on some strawberries and bananas, drizzle with maple syrup, grab some slices of bacon and this is the quintessential Sunday morning breakfast of Gout Killers!
