You can also make this cracker cookie recipe for when you need to curve that sweet tooth but don't want to dive into a full blow dessert!

Ingredients

  • 1/2 cup peanut butter
  • 1/2 cup strawberry jelly
  • 48 round, buttery Ritz Crackers
  • 12 ounces mini dark chocolate chips

Recipe

  1. Spread 1 teaspoon of peanut butter on one side of 24 of the crackers.

  2. Spread 1 teaspoon of jelly on one side of the remaining 24 crackers.

  3. Sandwich the crackers together, with the peanut butter and jelly together.

  4. Melt the chocolate in a heavy saucepan over low heat. Alternately, heat in the microwave in a microwave safe bowl on 50% power until melted.

  5. Dip each cracker sandwich in to the chocolate, completely coating them. Let  chocolate drip off, then transfer to wax paper to cool completely before serving.

Hoe much fun did my little niece and I have making these Lunch Time Cracker Cookies together. Besides being a delicious snack, (who doesn't love peanut butter and jelly on ritz crackers) the chocolate adds not only the fun in preparing them, but a great layer of flavor. Go ahead and have some fun making and eating these great little snacks with your kids.

Wow, this really is an effortless snack that looks so fun to make...and if you've got kids around I'm sure they can do all of the hard work for you without any complaints. LOL, I love that dark chocolate is being used as it's my favorite but I'm thinking raspberry jelly or jam would compliment the chocolate much better. Having said that though, I haven't tried it so I'm sure it's yummy either way!

What a fun snack idea for kids. Or, me. hahaha. These look so good. I love a little crunch and these look like a better alternative than reaching for a bag of chips. Thanks for sharing. Definitely saving this recipe for future use.
