Ingredients

  • 1/3 cup low-sodium tomato catsup
  • 1/4 cup low sodium soy sauce
  • 2 tablespoons honey
  • 1 tablespoon finely minced ginger
  • 1 tablespoon finely minced garlic
  • 1 teaspoon sesame oil
  • 1 teaspoon rice wine
  • 1 1/2 pound skinless boneless chicken breasts or thighs, or a combination
  • 1 cup red or green bell pepper, cut into 1-inch pieces
  • 1 tablespoon cornstarch

Instructions

  1. Spray the insert for a slow cooker with cooking spray.

  2. In a medium bowl, stir together the catsup, soy sauce, honey, ginger, garlic, sesame oil and rice wine.

  3. Cut the chicken into 1-1/2 cubes and add it with the bell peppers to the sauce. Toss to coat. Place into the slow cooker and cover. Cook 4 hours on low.

  4. Remove about 2 Tablespoons of the sauce in the cooker to a small bowl and stir in the cornstarch to make a smooth paste. Stir this back into the cooker and continue to cook, covered for another 15 minutes to thicken the sauce.

  5. Serve alone or over rice.

Hi, I love the recipes, but I am concerned that there is no nutritional information available for them. I am a diabetic, so I need to keep an eye on sugar etc. Do you supply nutritional information with any of the recipes?

Can I use the powdered ginger in this dish or do I have to use the fresh ginger? I just cannot find it this time of year, so I keep the dried kind on hand just in case I find something I want to try like this dish. It sounds like exactly the thing I need after a long day at work to take me away from it all.

I think adding some diced jalapenos for a little extra spice would be a great idea in this recipe and if you're diabetic, retain water or get swelling you'll definitely appreciate the low sodium catsup soy sauce. Also, Quinoa would be a delicious alternative for rice and is extremely diabetic friendly. Plus, if you're watching your diet or avoiding carbs like me...lol, it's loaded with plenty of protein, fiber, vitamins and minerals too!

I like my chicken and rice dishes to have a bit more flavor, but this was a good recipe if you need a quick weeknight dinner

I thought the sauce was very flavorful. It wasn't way too sweet like a lot of the sauces you can get.

I liked the flavor of the sauce. It paired quite well with the meat. I'm not sure that there was anything particularly outstanding about this recipe, but it'd be a suitable quick fix during the week.
