An easy banana muffin recipe for children
Use this recipe as a template for other fruit too – blueberries, chopped apple and raspberries – or omit the sugar and spices and add grated courgette and cheddar for a savoury version. Sprinkle with oats or chia seeds for a crunchy top.
Kids will love these banana muffins, and they're healthy enough for them to enjoy as a treat without parents worrying about too much sugar.

2 eggs
40g soft brown sugar
1tsp ground cinnamon
2 very ripe banana, peeled and squashed
180ml groundnut oil
200g self raising flour
1 bicarbonate of soda
½ tsp baking powder
pinch of fine sea salt
Method
Step 1
Heat the oven to 180°C and line a muffin tray with paper cases, brushed on the inside with a little of the oil.
Step 2
In a large bowl, beat the eggs with the sugar until foamy and add the oil, and continue to beat until well mixed. Then add the banana.
Step 3
Sift the flour, bicarbonate, baking powder and salt into a bowl and stir to combine. Then fold into the banana mixture.
Step 4
Spoon into the muffin cases and bake for 20 minutes or until risen and slightly browned.
