Chocolate Chip Cookies For Everyone (Gluten-Free, Paleo)

Everyone LOVES Chocolate Chip Cookies…right!  Well some of us can’t eat them due to ingredients that might be in the cookies. When I was offered to try Bob’s Red Mill Flour, I jumped on it real quick.  Baking is one of my favorite things to do, but for the past year, I’ve been on a gluten free diet, so the baked goodies have been on hold.  So ever since receiving my Bob’s Red Mill flour for this post, I’ve been a baking fool!

We all can make regular chocolate chip cookies; there are a TON of recipes out there plus even on the Nestle Toll House packaging. But what about us who need GLUTEN FREE Cookies?  I searched and found a perfect recipe for my family, and now we can enjoy cookies ANYTIME.  Also, a lot of Gluten Free Cookie recipes call for xanthan gum, but you don’t need it since it is already added to Bob’s Red Mill flour. 

The Bob’s Red Mill Gluten Free 1-to-1 Baking Flour is perfectly formulated for baked goods so of course, this is our flour of choice.

There is nothing better than warm chocolate chip cookies from the oven.

Gluten Free Recipe: 

  • 2 large eggs 
  • 1 1/2 teaspoons gluten-free vanilla 
  • 1 cup butter, softened (2 Sticks)
  • 3/4 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 1/4 cups Bob’s Red Mill Gluten Free 1-to-1 Baking Flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • A bag (12 oz) semisweet chocolate chips (2 cups)

Directions:

  1. Preheat oven to 375 F. 
  2. Mix flour, baking soda, sugar, brown sugar, and vanilla extract in a large bowl until creamy
  3. Add eggs, one at a time, beating well 
  4. Slowly add flour mixture then beat until well blended.
  5. Stir in chocolate chips
  6. Spoon batter onto a ungreased baking sheet- 2 inches apart
  7. Bake for 11-13 minutes
  8. Cool for 5 minutes

It's a shame it's kind of hard to find these types of cookies in the Philippines. I would like to try some even though i have no problem eating cookies with gluten in them.

There's no need to much worry for baking cookies if we knew that we use healthy ingredients only. Thanks for the Gluten Free Cookie recipes!!! Can't wait to bring the joy to home <3
