We have heard over and over again that we should be eating a variety of fruits and veggies of all colors. We’ve been told that we’re supposed to eat a rainbow. I was making smoothies the other day for my kids and as I put everything in the blender my kids exclaimed, “that looks like a rainbow!” I looked in the blender and sure enough it did. I didn’t have it in the perfect order so the next morning I started over and put everything in the blender to make it look even more like a rainbow and I wrote the recipe down. When making smoothies I like to make sure one or two of the fruits I add are frozen, this makes it so I don’t have to add ice and it makes it so we waste a lot less food around here! If I have fruit that is going to go bad before we eat it I freeze it to use it later for smoothies! If you don’t have frozen fruit you can use fresh, but add some ice to the blender. You will have to adjust the water amount a little, but it will work. Speaking of water, you can also use a little fruit juice or almond milk or whatever liquid you choose. Smoothies are wonderful because you really can make them your own!
This recipe makes about 5 cups of smoothie (it depends on the amount of water added). This is perfect for four small smoothies (it’s a great amount for my kids) or two large smoothies. Or I guess it could even be one extra large smoothie, but I wouldn’t recommend that. 🙂

Rainbow Smoothies
Ingredients
- 1 cup frozen strawberries
- 1 large clementine or 1/2 cup frozen clementine segments
- 1 banana
- 1 cup spinach
- 1 cup chopped kale
- 1 cup frozen blueberries
- 1-2 cups water
Instructions
- Add all fruit and veggies to a blender in order listed to make a rainbow.
- Add some water to the blender. Start with 1 cup.
- Blend everything together, adding more water if needed.
This is the blender that I own and I LOVE it. I have had it for nearly ten years and it still works exactly the same as when I first bought it. I even accidentally melted the bottom a little bit on a stove top that I didn’t know was hot (you can see it in the picture!) and it still works perfectly.
