Big, Chewy Chocolate Chip Oatmeal Cookies

baking on sailboatBig, chewy and loads of tantalizing texture.  Yes, that is exactly how I love my cookies but especially how I love my chocolate chip oatmeal cookies.

I have tried and tested a lot of cookie recipes and they have ranged from cake like disappointments to a glorified granola bar.  Over time I have tweaked and tested different variations and have finally come up with a recipe that hasn’t failed to impress my taste buds yet.  Each batch turns out exactly as it should.

Ingredients

  • 2 sticks of softened unsalted butter (AKA 1 cup, 16 tablespoons, 8oz, 226g)
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 2 eggs
  • 1 ½ cups flour
  • ½ teaspoon table salt
  • ½ teaspoon baking powder
  • ¼ teaspoon vanilla extract
  • 3 cups rolled oats
  • 2 cups chocolate chips (semi sweet or 60% works best)
  • Optional, 1 cup of walnuts or pecans (I like them toasted)

Directions

  • In a large bowl, beat the butter until creamy.  Add sugars and vanilla and beat until fluffy, then add in the eggs.
  • In a separate bowl, mix the flour, salt and baking powder together. Slowly incorporate the dry mixture into the butter/sugar mixture. Once incorporated, stir in the oats, chocolate chips and nuts.

This recipe yields at least 15 big cookies and now that you are ready to bake, you have two options.

  1. Bake only the cookies you plan on eating today and freeze the rest for cookies many days to come.
  2. Roll the dough into two inch balls and bake them all now.

My suggestion…These cookies are best served fresh and warm (like most cookies).  I prefer to bake one cookie for us now and roll the rest it into a log.  I wrap it in parchment paper, seal it in a heavy duty zipper bag and freeze it.  Then, when I’m ready to indulge, I simply slice off 1 inch thick pieces and bake.  This way we have fresh cookies every time and we’re not tempted to eat them all in one sitting (yes, it is possible and if you are like me, its best not to give yourself the opportunity).

baking at seaBake for approximately 15 minutes at 350 degrees.  You want the bottoms and just the edges to be golden.  The rest of the cookie should be lighter in color.  If you over bake them, they won’t have the same moist, chewy consistency.  Every oven and climate is different so your baking time may vary from mine.

Best Served With…

Hold up!  Don’t go checking out on me yet, we haven’t covered what to drink with these bad boys.  One of our all time favorite afternoon treats is one of these cookies with a seriously good cup of coffee or tea.  One time in Alaska we baked 2 giant cookies, wrapped them in foil to keep warm, brewed hot coffee in our insulated travel mug, hiked up a mountain and indulged in the crisp air with a picture perfect view of Denali…now that was heaven on earth!

Hello there! I honestly don’t know what to say, so I am going to tell you a bunch of random facts instead. I'm a fish eating vegetarian who hates spiders and loves snakes. I almost never took vacations growing up. I wanted to be Pippi Longstocking (still do). I misspell about every other word I write and still struggle with grammar. I love splurging on a good high tea (which is really hard to find these days). And whatever you do, don’t tell me I can’t do something, because then I'll HAVE to do it!

    I would like to see a cookbook of yours, or more recipes published on your site. The various segments showing you preparing meals in some of the videos interest me very much. I think I see you making healthy meals using a variety of vegetables and fruits. Also, you seem to use salsas, seasonings, and combinations of different food textures (e.g., beans with corn) that would satisfy the appetite at a meal without piling on too much fat and calories.
    My husband and I really like knowing about your adventures. Hang on during this difficult time–we will all make it through this!

    This is my new go-to cookie recipe! It’s so perfect! Right before our daughter was born I made two batches of dough and kept them in the freezer… It helped us feel so much more normal adjusting to our new life being able to just have fresh cookies, as weird as that sounds. Thanks for posting!

    Just made ’em and boy are they good. I tend to love eating raw cookie dough batter (ya, ya raw eggs, never been sick from eating cookie dough), but I didn’t eat any batter. While the batter is tasty, I didn’t like the texture of the un-cooked oats, so bonus for me! I made 12 cookies and froze the rest of the dough. Good thing because I already ate 3 cookies.

    Nikki, the oats are listed in the beginning Ingredients section, but in the Directions section, it says “In a separate bowl, mix the flour, salt and baking powder together”. This is where I almost goofed (I just wanted to let you know, so no one else would make the mistake I almost did).

    These cookies are delicious! I finally grabbed the one ingredient (chocolate chips) I was missing, and made them after work today. OMG!! I’m so glad I didn’t make them all tonight or I would be in trouble. I made 6 medium-sized ones and put the rest of the log in the freezer. I only made one change -used white chocolate chips instead of milk chocolate. Thanks so much for sharing this recipe!

It seems like you don’t have much fridge/freezer space, probably less than half of what a usual home might have and yet you left the island grocery with one bag! Were there secret bags delivered? LOL I think being on a boat you would need to have a real plan for meals. Would love more thoughts on what you eat, how you plan, and how do you cook in that cute little kitchen?! 😉

      They provisioned dry and canned goods in Ft. Lauderdale so that they would only need to shop for perishables. Good idea though about a “foodie” post!

    • actually our fridge is about 1/4 the size of a normal one! We do have to plan well and we’ve incorporated more dried fruit and canned veggies into our routine.

    O-M-G!! I resisted the siren call of that cookie recipe for like…….a week. I made 2-just for me-and scarfed those babies right up! They are the bomb Nikki. I followed your instructions and froze the rest of the dough; otherwise I’d be in some sort of sugar happiness induced coma! Those cookies should be marketed at a shop. You and Jason will never be without income again!! Sooooooo Gooood!!
