It’s so easy to dress up a simple cut of pork and turn it into something that’s perfect for the family on any regular night of the week or worthy of company on a special occasion. Pork blends so well with both sweet and savory flavors and I love that versatility in meal planning. This Balsamic Rosemary Pork Tenderloin recipe is so easy to make but tastes like you spent hours working in the kitchen. It’s a perfect recipe to add to your holiday menu for a festive party or gathering and can be dressed up with seasonal vegetables for a meal that works year-round. To make this Balsamic Rosemary Pork Tenderloin recipe, you’ll start with Smithfield Prime Fresh Pork Tenderloin {found in the fresh meat department at United stores}. I love to use pork tenderloin in my recipes because the size is perfect for absorbing a savory marinade, it’s always tender, and it tastes delicious whether you grill, roast, sauté, or throw it in the crockpot. The versatility makes it easy to use in any recipe. Did you know not all pork is created equal? In addition to Smithfield Prime Fresh Pork, you’ll also need 1/2 cup of your favorite balsamic vinegar, 1/2 cup extra virgin olive oil, two or three cloves of peeled fresh garlic, and two sprigs of fresh rosemary.
Mince the garlic, coarsely chop the rosemary, and combine all the marinade ingredients in a large plastic sealable bag or covered dish. Add the pork tenderloin and let it marinate for 2-4 hours in the refrigerator, turning occasionally to make sure the pork gets well marinated on all sides. Being able to prepare the meat in advance makes this a really easy meal for entertaining because there’s so little last minute work.
While the meat is marinating, prepare your favorite seasonal vegetables for roasting. I love colorful carrots but Brussels sprouts, sweet potatoes, and root vegetables all make delicious side additions to this recipe.
When the pork has marinated for the appropriate length of time, remove it from the marinade {discard the extra marinade}, place it on a greased baking pan or in a greased dish, and surround it with your vegetables of choice. Drizzle the vegetables with olive oil and sprinkle them with salt and pepper then place the pan in a 425 degree oven and roast the dish for 25-35 minutes or until the pork is fully cooked.
Remove the dish from the oven, let it sit for a few minutes, then slice the meat {I prefer half inch slices but thicker is fine too}.
Serve alongside the seasonal vegetables for a beautiful and delicious meal.
