This year, I planted cilantro for the first time and it’s flourishing! I decided it was time to start using it so I whipped up a batch of fresh garden salsa. This recipe is so simple but has a fresh, delicious flavor!
To make it, you simply toss together 2 large diced tomatoes, 1 medium finely diced, seeded jalapeno, 1/2 of a diced white onion, and 1/4 cup chopped fresh cilantro.
Mix in 1/8 cup of olive oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper …
… and serve it with tortilla chips. It’s fresh and so good … the perfect summer appetizer.
It’s also great with other flavors added: stir in a can of rinsed black beans, squeeze a lime into it, or add some fresh minced garlic.
