Well that was excessive, on to the recipes!
1. Bell Pepper Pizzas
These hand-held bell pepper pizzas channel the deliciousness of pizza with a healthy twist! Packing way more nutrients than the average bagel bite or pizza roll, they make a perfect appetizer for parties and a great healthy snack or lunch for kids!
I’ve always been one to justify my pizza obsession by insisting it’s a vegetable. If you put enough vegetables ON something it, by default, becomes a vegetable… right? No?
In this case, if you stuff enough pizza toppings inside a bell pepper it absolutely becomes a vegetable.
2. Cheesy Spinach Stuffed Peppers
We’re LOVING this fun twist on classic stuffed peppers! These Cheesy Spinach Stuffed Peppers are packed with an entire BOX of fresh baby spinach and loaded with so much flavor, you’ll forget you’re eating #alltheveggies
Serve them as a side dish or enjoy them as the main course; they’re beyond flexible!
3. Baked Bell Pepper Tacos

These fiesta favorites have been a huge hit on the blog lately and my friends always rave about them! Ooh! And my Healthy Stuffed Peppers with Cilantro Avocado Sauce are also pretty darn amazing if you want bell pepper tacos with a Southwest vibe. YUM!
4. Cheesy Chicken and Broccoli Stuffed Peppers
I first made these chicken and broccoli stuffed peppers for my neighbors back in North Carolina and we’ve been making them on a regular basis ever since!
For a tasty vegetarian swap, try adding some cauliflower instead of the chicken + extra broccoli. They’re also phenomenal with a dash of hot sauce or salsa on top! Deeeelish!
5. Hawaiian Bell Pepper Pizzas
A tasty spin on my beloved bell pepper pizzas, Hawaiian Bell Pepper Pizzas are fun and flavorful! These hand-held bell pepper pizzas channel the deliciousness of pizza with a low-carb twist, so ditch the crust and grab a bell pepper!
I love adding a little drizzle of sweet + smoky BBQ sauce on top!

These healthy bites are great for kids and adults alike! Serve them up as an appetizer or as a veggie-filled after school snack! No matter how you top them, they’re sure to be a slam dunk!

What gorgeous recipes! I love peppers but they don’t love me back.
It’s probably the only food that upsets my stomach terribly
But I can eat the fillings :).
We’d make quite a pair, Sue! I recently found out there are a lot of foods that don’t quite love me back lately — coffee being the most traumatizing of that list! Wahhhhh! — These stuffed pepper recipes would be AMAZING stuffed into spaghetti squash, acorn squash, or even zucchini! Hope that helps!
Awww hon, so sorry to hear that! And you say coffee??? oh my that is my reason for living haha!
I have a stomach of steel EXCEPT for peppers. And I grew up on them (Italian) They are so wonderful in so many ways,
I love these recipes though. I just won’t eat the pepper, thank you 🙂
Oh and yes, I can fill other veggies, thanks again!
Coffee was my everything too, it’s such a bummer! I cheat more often than I should lately (especially when with friends and in dire need of an energy boost) but I for sure can’t have it daily like I used to. I make it for my husband and sniff the mug before handing it to him 😉
I had the same problem with coffee. I drank it all day and sometimes all night until I started getting older and it began really hurting my stomach. Sadly to say, I had to give it up. Until I made a trip to my sister’s and she introduced me to an instant coffee named Kava. I couldn’t believe how good it tasted and it didn’t even upset my stomach after 2 large cups. I visited her for 3 weeks and had coffee everyday.
That’s amazing Anita! So glad you found a way to enjoy it! <3
