Paleo Challenge Day #3

Day 3 of my Paleo Challenge is today and there’s not a lot to report My diet still going well and I haven’t hit any big craving yet.

The weekend should be interesting. I generally act like a starving child in a candy store most weekends, so pray for me tomorrow.

Stats:

Current weight: 185 pounds

Net weight loss: 6 pounds

This is good of course, but nothing to get excited about. The pounds always fall off at the beginning, but next week it will start to get real.

The keys to these challenges are simple: Keep your meals simple!

Breakfast was tasty — scrambled eggs, ham rollups (no nitrates of course) and some raspberries. Yum!

It was simple and delicious!

Lunch was at a fantastic authentic Chinese place here in Birmingham. I got jalapeño beef — wow!

Very spicy and oh so good!

Dinner was a repeat of the chicken cacciatore that I made a couple days ago.

Things should get more interesting this weekend.  I’ve been to the grocery store to stock up on serious Paleo goodness that I’ll be cooking for the weekend and next week.
