Lentil and Couscous Salad

There are so many good things about summer… but at the top of the list for me are salads.  I love salads.  Healthy, tasty and usually quick to prepare.

When I started looking through the Belgian food blogs for salads, I was completely overwhelmed by the choice, it was very difficult to pick my top 5,  but here are my favourites:

 

Let’s start with a new take on a classic salad; The Brussels Cook(er) has de-constructed the Chicken Caesar… doesn’t it sound fantastic.

Want to try something Portuguese?  Why I Am Not Skinny has a Portuguese Black Eyed Bean and Tuna Salad, which I could eat over and over again.

For a substantial ‘dinner salad’ check out this great dish from Going to Brussels Toasted Quinoa, Lentil and Poached Salmon Salad

Whether you are a vegetarian or just trying to cut down on the amount of meat you eat VaneValentine‘s Grilled Halloumi and Mint Pesto Salad is for you.

For something a little different God Mat  has put together a Kohlrabi and Beetroot Salad with Honey and Mustard Dressing.  I love the way the colours look on the plate!
