Mocha Chocolate Chip Cookies

I love to make desserts. If you hadn’t noticed that about me by now, well, you must be oblivious. Just go to the Recipe Page of my site and you will see that I tend to enjoy baking sweet treats… But the other thing I love to do is make desserts for our friends–and I really get excited when they enjoy the dessert (especially if they don’t eat gluten-free normally!) My dear friend Peggy Sue does NOT enjoy coconut and being that the vast majority of my desserts include either coconut flour, coconut oil or coconut milk…that makes for not too many desserts of mine she would really enjoy eating. She LOVES coffee though…so when I was looking for a fun dessert I could make that she would enjoy, I came across this recipe which is very similar to my Almond Butter Dark Chocolate Chip Cookies. I decided to give it a go using honey instead of maple syrup and a bit more coffee. Both her and her husband LOVED them…thus this post.

I first came across this recipe via Pinterest, contacted Kelly from A Girl Worth Saving and got her permission to post it on my site (with my variations). She has TONS of other amazing-looking dessert recipes. Check-it out if you haven’t yet!

Mocha Chocolate Chip Cookies

Yield: 15-20 cookies depending on the size you make them

Ingredients:
1 cup almond butter
1/3 cup honey
1 egg (or substitute 1 Tbsp. ground chia seed and 3 Tbsp. water for an egg-free version)
1 tsp. vanilla extract
1/2 tsp. baking soda
1/2 tsp. salt
1 Tbsp. unsweetened cocoa or cacao
1 tsp. ground coffee (ok, I know nothing about coffee, but I use off-brand regular ground coffee–not instant)
1/2 cup dark chocolate chips (make sure you get dairy-free chocolate chips if you have a dairy allergy)

Directions:
1. Preheat oven to 350 degrees.
2. Oil baking sheets or line with parchment paper.
3. Stir together in order of ingredient listing. Mix well. Make sure honey is fully incorporated.
4. Scoop with a cookie scoop onto cookie sheet.
5. Bake for 8-12 minutes. Remove from oven. Let cool a couple minutes. Carefully remove cookies to cool on a cooling rack. Enjoy!
