Make Chips from Any Leafy Green, the Alton Brown Way


Veggie chips are healthier way to fulfill your craving for a salty, crunchy snack. Luckily, they’re easy to make. Here’s Alton Brown’s method for turning any leafy green, like mustard greens, chard, collard greens, and of course, kale, into chips.

If you can’t watch the video at the link below, here are the basic steps:

  1. Heat your oven to 300 degrees (~150 degrees C).

  2. Wash and dry your greens. Make sure they’re as dry as possible or the oil won’t coat them well later.

  3. Remove the leaves from the stems and cut the leaves into one inch pieces.

  4. Toss the leaves with olive oil and salt, then lay them out on a parchment paper lined baking sheet.

  5. Bake for 15-20 minutes until they’re just starting to brown on the edges.

The best thing about this method is that you can apply it to almost any leafy green you have around. You can also add the chips to pasta, sandwiches, or enjoy just as a snack. Check out the link for the full video.
