New Yorkers Are Dropping $9 On Paper Cups Of 'Bone Broth'

EAST VILLAGE — Bone broths, the hip new health-conscious beverage, are now available to go.

Paper coffee cups filled with the nutrient-rich liquids — which some say promote gut health, reduce joint pain and inflammation, and even help with hair and bone growth — are now available at Brodo, which recently opened on First Avenue near East 12th Street.

“I think it’s an incredibly powerful, nourishing, wonderful tonic that just so happens to be absolutely delicious and we all need to be drinking more of it,” said owner and chef Marco Canora.

One day a few months ago, as Canora was sipping on broth and looking at the window, which connects to Canora’s restaurant, Hearth, he had a moment of inspiration and decided to start selling cups of broth from the window, he said.

The window currently offers three types of broths: organic chicken, gingered grass-fed beef and the Hearth, which is made with chicken, turkey and beef.

He is currently developing a vegetarian broth that will contain seaweed and dried mushrooms, he said.

Customers can also customize their drink with six add-ins — like calabrian chili oil, shiitake mushroom tea, fermented beet juice and freshly-grated tumeric — which cost an additional 75 cents each.

“They all go well with everything. There’s no right or wrong,” Canora said.

Bone broths were available at some artisanal butchers and online, he said, but no one had made it portable just yet.

“No one’s doing it hot, seasoned with customizable add-ins in a coffee cup with a sip lid, so that kind of makes it unique,” Canora said. “You kind of drink it as a snack or as a hot beverage.”

The portable broths start at $4 for an eight-ounce cup of organic chicken broth and go up to $9 for a large, 16-ounce serving of gingered, grass-fed beef broth.

Brodo also sells 32-ounce jars of frozen broths to take home, starting at $12 each.

Brodo, located at First Avenue near E. 12th Street, is open Monday through Saturday from noon to 7:30 p.m.
